Peru San Ignacio x Brazil Sul de Minas Dual Origin Espresso
We embarked on a mission to create a memorable and distinct espresso to celebrate the opening of Fawkes Coffee’s first café. Our goal was to combine two high-quality single-origin beans that would not only stand out on their own as an espresso but also perform exceptionally in various iced espresso drinks. We needed a blend that could cut through the sweetness of steamed milk in lattes and cortados, yet remain vibrant yet not overpowering in an Americano.
To achieve this, we chose to mix both natural and washed coffees from different countries, sourced from varying altitudes and soil types. This approach aimed to develop a richly flavoured and bold espresso. We then reverse-engineered the blend, mixing the green beans prior to roasting to ensure a consistent mouthfeel and body in the final espresso.
